Lollipop Candy Cookie

This ice box cookie is just cute, and one of my favorite recipe:)  Once you make the dough, you can freeze them and cut & bake anytime you want!  This could be a keeper for unexpected guests!

 150g plain flour

100g unsalted butter

75g icing sugar

25g egg (about 1/2 egg)

1) Cream the softened butter.  Add icing sugar and whisk till white.  Add beaten egg gradually and mix well.

2) Add sifted flour and mix.  Careful not to mix too much.  Divide the dough into 2 and add cocoa powder to one.  Wrap the dough separately in plastic wrap and rest in the fridge for 30min.

3) Remove the wrap from the dough.  Flatten the dough and place the cocoa dough on the vanilla dough.  Roll them up and wrap it up with plastic wrap or baking sheet.

You can just freeze them until you want to bake. 

4) Cut into 5mm thickness and bake in the oven at 170.

Ice box cookies are usually coated with sugar after baked, but I don’t like that way… so these cookies I made are just cookies, actually :p

Smell sweet~  good with long black 🙂
